According to butcher Michael Saperstein, co-owner of Sunshine Provisions in South Florida, ground beef and value cuts are flying off the shelves due to high grocery prices.

This trend is not unique to Sunshine Provisions. The butcher counter nationwide is indicating a shift towards making do with less in response to economic challenges. People are gravitating towards lesser-known and more affordable options like Denver steak, a marbled cut from the chuck, and mutton steak, often overlooked compared to beef.

Mutton steak offers a rich, gamey flavor similar to premium steaks but at a fraction of the price. Chicken, though not a beef cut, remains a highly affordable and popular grilling option during times of economic strain. The most popular chicken offerings at Sunshine Provisions include airline breast, boneless half chickens, skin-on boneless thighs, and leg quarters.

Sausages, meatballs, and pork loin chops are also seeing a spike in popularity. Chicken thighs and ground beef are popular choices among shoppers looking to save money on meat purchases. However, it's not just about saving money. Anxiety is influencing the cuts of meat people choose, the meals they plan, and their willingness to spend on dinner.
